The main ingredients are root vegetables which have a very ๐ ๐ซ๐จ๐ฎ๐ง๐๐ข๐ง๐  ๐š๐ง๐ ๐ฌ๐จ๐จ๐ญ๐ก๐ข๐ง๐  effect on the body (increasing water and earth element) & mind (relaxing the parasympathetic nervous system). Beets specifically have a ๐œ๐ฅ๐ž๐š๐ง๐ฌ๐ข๐ง๐  ๐š๐ง๐ ๐ญ๐จ๐ง๐ข๐œ effect on the blood. Carrots are also mildly tonic, anti-oxidant & rich in nutrients๐Ÿ‘Œ๐Ÿผ


Beetroot-Carrot Soup recipe:

Ingredients for 4 persons:

(try to buy organic to increase flavor and nutritional value)

  • 1tbsp ghee or coconut oil
  • 2 onions
  • Thumb sized piece of ginger
  • 1 knob of garlic
  • 500gr carrots
  • 500gr beetroot (dont buy them pre-cooked or you will lose the soups beautiful color)
    --> all of the above peeled and cut in small pieces

  • 1200ml boiled water
  • 1 tbsp vegetable stock
  • Peel and juice of 1 orange
  • Drizzle of creamy oat
  • Few rose petals
  • Pepper and salt to your taste

 

 

Directions:
Heat ghee in a big soup pan and bake the onions until glazy. Add ginger and garlic and bake 5min. Add beetroots and carrots and stir for another 10min. Add the water and vegetable stock and let the soup simmer on low heat for about 45min (make sure it doesnt boil dry). Add in the orange peel and juice. Blend the soup and add salt & pepper. When serving, add the creamy oat and rose petals.
